Here is one of my kids’ favourite slices that I add to their lunchboxes! It is so delicious and I definitely feel like the best Mum in the world adding something homemade, sugar free and healthy! Mum of the Year award for me
Sugar Free Lunchbox Slice
- 2 cups rolled oats
- 1/2 cup wholemeal self raising flour
- 1/2 shredded coconut
- 1 cup blueberries
- 2 1/2 tsp cinnamon
- 80g unsalted butter
- 1/2 cup rice malt syrup
- 1/2 cup dextrose
Method
- Preheat oven 180C
- Grease and line a slice tray
- Mix oats, coconut, berries, cinnamon in a large bowl (kids can mix gently with a fork)
- In a saucepan place butter, malt, dextrose and mix on a low heat for 6-8 minutes
- Bake for 25-30 minutes depending on your oven
- Allow to cool in pan 100% before taking it out and slicing
- Keeps for 2 days in an airtight container
