Sugar Free Slice

Here is one of my kids’ favourite slices that I add to their lunchboxes! It is so delicious and I definitely feel like the best Mum in the world adding something homemade, sugar free and healthy! Mum of the Year award for me :)

Sugar Free Lunchbox Slice

  • 2 cups rolled oats
  • 1/2 cup wholemeal self raising flour
  • 1/2 shredded coconut
  • 1 cup blueberries
  • 2 1/2 tsp cinnamon
  • 80g unsalted butter
  • 1/2 cup rice malt syrup
  • 1/2 cup dextrose

Method

  • Preheat oven 180C
  • Grease and line a slice tray
  • Mix oats, coconut, berries, cinnamon in a large bowl (kids can mix gently with a fork)
  • In a saucepan place butter, malt, dextrose and mix on a low heat for 6-8 minutes
  • Bake for 25-30 minutes depending on your oven
  • Allow to cool in pan 100% before taking it out and slicing
  • Keeps for 2 days in an airtight container
